Houston, we have a crawler!!

I had a great day today! I woke up happy and have remained happy. I did laundry and some other things. Then around noon, Derek came home and we relaxed together until about 1:40pm, when I got ready for my dentist appointment. It was his first time alone with Bailey. I made it there five minutes early, then waited for about 15 minutes before they called me back.

I was only in the dentists chair for like 30 minutes before I was done. Then I went back on post to the Commissary and got some groceries. I came home and Derek told me Bailey had a huge blowout. He stain treated her PJs and I was proud of how well he did with her. (Not like I thought he'd do any different. He's a great dad.) He had her down for a nap by time I got home. So we relaxed until she woke up.

Around 6:30 I started making dinner. Crunchy Taco Chicken and Mexican rice. (Recipe for the chicken below.) When I started melting the butter for the rice, Derek called me into the living room to show me something. I walked in there and he was trying to coax Bailey to crawl by putting his phone on the floor. Finally, I texted it thinking that if it went off, she'd go for it.... and she did! We're now proud parents of a crawler.

I walked back to the kitchen and saw smoke... smoke and a fire on the stove! I panicked and screamed for Derek, then grabbed the pan off of the stove (who does that?????) But it made the fire go out. He came in and we started opening windows and doors before the fire alarms went off. But it was too late for that. So I ran around and found the batteries and took them out. After getting all of the smoke out of the kitchen and throwing away my favorite pan, I finished dinner. One of the walls by the stove is very sooty, though. So I'm going to have to clean that.

The rest of the night consists of relaxing with my husband. We just got our love bug to bed and we have The X Files on.

My big "oops!"

1 1/2 cups shredded cheese, divided

Directions:

1. Arrange chicken in ungreased 9 x 13 baking pan, set aside.
2. Combine soup, one cup cheese and taco seasoning.
3. Spread over chicken and bake at 350 degrees for 45 minutes.
4. Sprinkle with crushed chips and remaining cheese. Return to oven and bake until cheese melts, about 5 minutes.
